Deep red color, with bluish hues. Intense red fruits, jams and dried figs aromas combined with notes of tobacco and chocolate. Good attack, voluminous and well balanced structure with ripe tannins. Notes of fruit are combined with the bouquet from the aging in oak barrels. Excellent complement of red meats and hearty dishes in general.
Cold pre-fermentation maceration at 6-8 °C for 10 days. Addition of selected yeasts. Alcoholic fermentation at controlled temperature between 24-26 °C for 10-12 days. Daily pump-overs with delestage at the beginning of the fermentation. Post fermentation maceration for 7 days.
