Intense ruby red color. Cherry and pepper aromas; vanilla and coffee bouquet from the oak aging. Good volume, balanced on palate with red peppers, spices and a touch of chocolate or coffee flavours. Ideal combination with red meat or dishes with spicy sauces.
Cold pre-fermentation maceration at 6-8 °C for 7 days. Addition of selected yeasts. Alcoholic fermentation at controlled temperature between 24-26 °C for 12 days. Daily pump-overs with delestage at the beginning of the fermentation. Post fermentation maceration for 12 days.
