Intense and deep red color with violet hues. It presents red fruits, violets and plum aromas and sour cherry jam notes. Good balance of fruit and oak with predominance of fruit. The presence of red fruits is repeated on palate. It is elegant with firm tannins that ensure a long finish.
Ideal combination with grilled meats and vegetables, pasta or hard cheeses.
Spontaneous fermentation with indigenous yeasts. Alcoholic fermentation at controlled temperature between 24 -26 °C for 12 days. Daily pump-overs with delestage at the beginning of the fermentation. Post fermentation maceration for 12 days.
