Salmon color, abundant small bubbles that define a persistent crown. The presence of red fruits, roses notes and fine cherry aromas stand out. It is balanced, fresh and fruity in mouth. Ideal combination with appetizers, white meats and seafood.
BASE WINE
We obtain the juice by pneumatic pressing. We cool the must at 4 °C, and settle lees, racking and addition of selected yeasts. Alcoholic fermentation for 20 days in stainless steel tanks, temperature control between 14-16 °C.
SECOND FERMENTATION
We blend the base wines and start the fermentation in stainless steel tanks. The second fermentation lasts 40 days. Maturation on fine lees between 9 and 12 months to achieve a good balance between fresh fruit and complexity.
