Las Perdices Ice is the product of a unique manufacturing process. The grapes are harvested in mid-June, between 60 and 90 days after the usual date. At this point they have an advanced state of dehydration and therefore of concentration of sugar, aromas and flavors. The grapes are harvested manually in boxes, then, they are taken to the winery where they are cooled to temperatures below -8 °C for several days.
Under these conditions, the winemaking process begins. The grapes are directed directly to the pressing and the ice crystals are removed, this process allows to obtain a juice or must with unique characteristics that ferments for more than 30 days at temperatures between 10 and 12 °C. Gradually, the fermentation begins to slow down to a complete stop, leaving a significant amount of residual sugar in the final wine.

Bright cherry red color. Aromas of overripe red fruits, prunes and sour cherries. Unctuous and complex in the mouth with notes of dried plum and quince. A good sugar / acidity ratio gives it a unique personality. Intense and long finish. Ideal combination with chocolate desserts, red fruit tart and quince jelly.
The grapes are cooled for several days until they reach temperatures below -8 °C. At this temperature, water begins to crystallize in the form of ice crystals. Subsequently, the grapes are pressed obtaining the must or juice with unique characteristics.
