BLANC DE MALBEC

The process to make a white wine with red grapes, called Blanc de Noir, consists of quickly removing the skin once the grape is ground so that it does not transmit its color to the must. This form of vinification requires the utmost care and detail so that the wine is not tinted.

It differs from other white wines in its aromatic profile: red fruits stand out, such as cherry and strawberry, and citrus notes, such as pink grapefruit, with good intensity. On the palate it is fresh and with a good structure.
A wine with identity to be enjoyed as an aperitif or to accompany dishes with fish or shellfish. Ideal for light dishes, with fresh herbs and soft cheeses.

The grape is harvested early. Once harvested, it enters into the press and is quickly pressed to prevent the juice being colored by the skin. Then the vinification process of a white wine is carried out, selected yeasts are planted and fermented at a temperature between 12º and 14º, to obtain freshness and expression on the nose and in the mouth.
The result is a wine with well-marked acidity.
